Pea Shoots

Pea Shoots are a versatile and durable micro/shoot. Able to stand up to some heat, it can be added to finish stir fry or help make up to 300 plates pop for catering events or table service. Pea shoots are the most popular for their volume/ value per tray. Able to store in cooler until harvested or harvest and store in sealed container/bag. One of the longrst varieties carried, aprox 4-6inches long. Optimal use between 1 and 7 days

Red Rambo Radish

Red Rambo Radish is a great compliment to all plates as a contrasting color or flavor. Deep purple colors, with minimal greens and strong radish bite. Wonderful paired with local fish and house made pasta or as a garnish for delicate canapes. The longest radish shoot, approx 4 inches. Optimal use between 1-3 days.

Arugula

Arugula microgreens are a densely packed trays of short stemmed greens. Very peppery, much more so than it’s mature counter parts. Easily interchangeable with arugula on menus, this product can be used more sparingly while still achieving the same flavor profile of a dish. Ideal for small, technical dishes, as well as additions to subtle or bold flavors

Micro Cilantro

Micro Cilantro has crisp and fresh cilantro flavor with very delicate stems. This green works well with Mexican or Asian dishes including complex plates with bold flavors. 2-3 inch stems. Optimal use 1-5 days – Keep living in cooler away from fan or harvest and store in air tight container or bag.

Kaiware

Kaiware is a traditional Japanese microgreen radish shoot.
Grown as long as possible in dark, with only 48hr of light, these are the most tender shoots with great radish flavor. Approx 3-4inches. Optimal use 1-5 days. Keep living tray in cooler away from fan. Lasts 2-3 days after harvest, when kept in air tight container or bag.

Chefs Blend

Chef Blend is a mix of broccoli, broccoli raab, arugula, mustard and red rambo radish. Similar to horseradish, this micro has bold and spicy flavors. Approx 1-2inches, thin stemmed. Optimal use 1-5 days. Keep living in cooler away from direct fan. Lasts 2-3 days after harvesting in air tight container.
